Have you ever woken up in the morning and nothing sounds good, and you’re way too sleepy to even think about coming up with something creative? This is me pretty much every morning. So I started making overnight oats part of my meal prep routine.
The night before or even a few days before, I was feeling far more inspired than I am at 6 a.m. on any given morning. Plus I’m a lot better at making and keeping healthy choices around when I plan ahead. That’s when I dreamed up these pecan pie overnight oats.
Let’s be honest, eating healthy isn’t easy and I often dream of desserts. Like a lot. So I try to find ways to reimagine those flavors into my healthier alternatives.
There are just those times of the year when even if its not technically “the season” to eat something, I still crave it. And pecan pie is one of those things. Plus the husband loved them, so its a win-win. We also have a bit of a line up of pie inspired overnight oats – we’ve got peach and apple if you’re a bigger fan of fruit pie than you are pecan pie.
All right, now down to the deliciousness…
Pecan Pie Overnight Oats
- ½ cup oatmeal
- ½ cup almond milk
- ¼ cup pecans
- 1 tsp honey
- ⅛ tsp vanilla extract
- ¼ tsp pumpkin pie spice
Pour all the ingredients in a jar. Mix together. Put lid on jar and allow to sit overnight (at least 8 hours).
