These cookie butter truffles are the perfect treat for your holiday party or to give to friends in handmade gifts. The light spice of the cookie comes together with white chocolate for the perfect velvety little package of yum. They’re also incredibly easy to make and can whipped up in less than 15 minutes!

They’re made from Lotus Biscoff cookies. If you’ve been on an American Airlines or Delta flight in the states, you might have had the spice cookies there. But cookie butter takes them to another level.
I first discovered cookie butter about a year ago. Someone had posted a picture on instagram and mentioned how addicted they were to the stuff. I was curious, so I went looking for some at the store and managed to find some. I brought it home and wow – I understand how people get addicted to the stuff. It’s good. Really good. My only problem was figure out how to put it into recipes. Such a hard challenge you know? Ha! So I came up with this one, and decided to share.
Cookie Butter Truffles
Ingredients
1 8.8oz Biscoff cookies
3/4 cup Biscoff cookie butter
1/2 cup butter melted
1 10oz white chocolate chips
Directions
Crush up the biscoff cookies in a food processor. Pour into bowl.
Pour melted butter over top of cookies and stir.
Add in 3/4 cup cookie butter and combine.
Place mixture in freezer for 5 minutes to chill.
While waiting, melt white chocolate chips in bowl.
Remove cookie butter “dough” from freezer and form into round truffle shaped balls.
Using a fork or skewer, dip truffles into white chocolate and set on parchment paper to cool.
Serve! Recipe should make about 20 truffles.
