I never expected to be a person who liked, or even craved salad, but with salads like this beer can chicken salad it’s hard not to love it. It only takes about 15 minutes to whip one of these salads up, and they also make for great meal prep. Just prep all the ingredients ahead of time and put into individual portion containers. Store in your fridge, and then grab one for a quick lunch or dinner!

There are also lots of ways you can adjust this salad to fit your needs – add more veggies, drop the croutons, or even skip the dressing. Honestly, it packs enough flavor to go without. My favorite trick though is to add a tablespoon or two of water to my dressing to make it stretch a little bit further without giving up the extra flavor.
This particular recipe makes two large salads.

Healthy Beer Can Chicken Salad
- 1 large chicken breast (or 2 small chicken breasts)
- 1 tbsp beer can chicken seasoning (You can buy Weber’s here)
- 4 cups green leaf lettuce
- 1 cup shredded carrots
- 1 cucumber chopped
- ½ cup croutons
- ½ cup chopped cherry tomatoes
- 2 tbsps light ranch dressing
Heat a skillet over medium heat. Season chicken with beer can chicken seasoning. Cook the chicken until it’s brown on both sides, and fully cooked. While cooking, wash and chop up veggies. Spread them out on plate, add croutons, and drizzle ranch dressing. Once chicken is cooked, slice and add to the salad. Serve!
