This is that time of year when I always seem to stumble out of bed after two snooze alarms go off out into the darkness of my kitchen only to get a little cranky when I actually have to think about what I’m going to make for breakfast. That’s where these strawberry cheesecake overnight oats come in – right about the time I’m thinking that running out to get breakfast at a local drive thru might be an easier option.
Whether you’re trying to lose weight or just make your mornings go a little more smoothly, having breakfast ready ahead of time makes it so much easier to make good decisions. Plus, it saves a lot of money!
So, as part of my getting healthy and saving money plan I started putting overnight oats into the rotation of breakfast options.
I gather all the ingredients on Sunday night and start putting it all together. Usually about 3 days worth at a time.
My only rule with things that have to be meal prepped is that the recipes still have to be quick and easy. I’m not really saving time if I’m spending half my Sunday trapped in my kitchen!
Overnight oats are the perfect solution to that. They take almost no time, and the combos and toppings are almost endless. Something for everyone!
My husband really loves cheesecake, and its one of the things he misses now that we’re working on the whole being healthy bit. So I came up with this recipe to try and give him a sweet tooth fix while still keeping it healthy.
Strawberry Cheesecake Overnight Oats
- ½ cup oatmeal
- ½ cup almond milk
- ½ cup frozen strawberries
- ¼ cup cream cheese
- 1 tsp honey
- ⅛ tsp vanilla extract
Blend together strawberries, cream cheese and honey. Mix the rest of the ingredients in a jar. Top with cheesecake filling. Put lid on jar and allow to sit overnight (at least 8 hours).
More options:
- You can switch out the cream cheese for yogurt if you want less calories and more protein
- You can sub the honey for another low calorie or no-sugar sweetener
